Candy without a candy thermometer? I was skeptical but willing to give it a try. They were actually that easy and delicious.
Gluten Free Pecan Pralines
1 1/2 cups of pecans, chopped slightly
1 cup brown sugar dark or light works
⅓ cups heavy cream
¼ cups butter, unsalted
1 cup confectioners sugar (aka powdered)
1 teaspoon vanilla
- In a medium saucepan, bring brown sugar, whipping cream, pecans and butter to a boil over medium heat, stirring frequently. Make sure you get the edges of the pan too.
- Lay out a piece of parchment paper on the counter or table. Make sure you have a spot for the hot pan. You will be working quickly.
- Boil the mixture for about 1 minute. Remove from heat, and whisk in powdered sugar and vanilla until smooth.Stir mixture until powdered sugar has dissolved and thickened. Drop heaping spoonfuls of the praline mixture onto parchment paper and allow to harden/cool.
