This is such a cute recipe to make for a snow day or to bring to a holiday gathering. Crystal Tempesta of Alma Nove in Hingham shared her recipe for these Sugar Cookie Snowmen for Boston’s Virtual Cookie swap.
Sugar Cookie Snowmen
For the Cookies
- 1 cup butter (Room Temperature)
- 2 tsp baking powder
- 1 cup granulated sugar
- 2 ¾ cups flour
- 1 tsp vanilla extract
- 1 egg
- 1 – 3 inch diameter round cookie cutter
Pre Heat Oven to 375 degrees
- In a stand mixer fitted with a paddle attachment, cream butter until smooth and fluffy about 1 minute;
- Add sugar and mix until combined
- Add eggs and vanilla extract
- In a separate bowl combine flour and baking powder and give it a quick whisk by hand;
- Add dry mixture to butter mixture, Mix just until combined
- Sprinkle a cutting board lightly with flour so that the dough wont stick. Roll out dough to ¼ inch (Be careful to not have the cookie too thin or it will be too crispy and dark)
- Spray a sheet lan with cooking spray and bake cookies for 8-10 minutes. They will be done when they are set and have a slight golden edge.
- Cool completely on rack before decorating
For the Icing
- 3 Cups powdered sugar
- 6 tsp light corn syrup
- 6 tsp heavy cream
- 1 tsp vanilla extract
- food coloring
- 1 bag large marshmallows
- In a stand mixer fitted with a whisk attachment start mixing the powdered sugar
- Add the heavy cream, corn syrup and vanilla extract. You may need to add a little more heavy cream or powdered sugar. You are looking for a slightly thick consistency.
- Separate the icing into different bowls
- Add food coloring for the nose, arms, scarf etc.
- Put the different colored icing in pastry bags or just use zip top bags. Decorate the face on the marshmallow and let it dry.
- Spread the white icing over the top of the cookie with a kitchen knife. Place the decorated marshmallow face on the top part of the cookie. Then start decorating his little melted body with arms, legs a scarf get creative and have fun!
