1-1/2 slices of butternut or other orange squash. About 3/4 cup 1/2 inch cubes.
1 packet of flax meal (2TBSP)
3/4 cup plain yoghurt
1 cup of baby spinach
1TBSP Honey
1 allspice berry or 1/8 tsp.
1 tsp. cinnamon
a pinch nutmeg
This is a very earthy pumpkin pie smoothie. If you want it sweeter and a bit more of a treat /dessert then you can use vanilla or maple yoghurt. The sweetness varies with the squash you use so taste as you go.
Directions
Pour water over the squash cubes in a bowl, cover and steam the squash for 2 minutes in the microwave.
Mash the squash with a pinch of cinnamon and some brown sugar if you want it sweeter. Otherwise just toss the squash no liquid into the blender.
Add a 1/4 cup of cold water to blend and cool the squash.
Add the rest of the ingredients.
Blend. You can finish the smoothie off with a swirl of maple syrup or boiled cider and a fresh sprinkling of grated cinnamon and nutmeg.
I like my smoothies very cold so I serve this one over ice.
You can use a spice mix like Soluna Garden Farms’ Ras El
Hanout for Coffee. I also like using this boiled cider instead of maple syrup as my finishing touch.
