Shipping in Sweet: Bell’s Cookie Co.

The beach towels are about to be folded and put away for the summer. Backpacks are replacing flip flops at the door. For those of you who have older children, there is a good chance that you just set them up at a home away from home. If you are living solo, or with significant other(s), maybe the end of summer shifts are smaller but no less significant. The changing of season from summer to fall is bittersweet. It can be a relief to get back to routine for many but not without a wistful longing for those carefree summer days. Bell’s Cookie Co. cookies are just sweet aside from the occasional use of bittersweet chocolate. We live in “little treat culture” times and as with anything, in balance it is a good thing. I know many who love to bake and send treats, and others who find it a chore. The solution is to send yourself or send a loved one some cookies. I was recently sent a box of cookies from Bell’s Cookie Co. to taste test and they kept disappearing from the box, which is high praise because my child and I are usually pretty slow to get through cookies.

There are three equally important factors when it comes to cookies in my book: flavour, sweetness, texture. A cookie that is too sweet will sit on my counter until it is time to go to the compost. For me, a softer cookie (not cake-like) but chewy and soft in the middle reigns supreme, but I appreciate a crisp cookie as well. Bell’s Cookie Co hit the spot. I especially liked their flavour options, and while they were sweet they were not over the top. I think my favourite cookie was the Colombian corn cookie, which had a slight crumble to it and a delicious corn flavour. Bell’s Cookies tend to be soft and chewy cookie, full of flavour.

Bell’s Cookie Co. is owned and operated by Tomas and Brooke Perez, who met in Bogotá, Colombia, where Brooke moved after graduating from the Culinary Institute of America to work as a culinary consultant. As so many good things do, Bell’s Cookie Co. developed organically out of necessity. As owners of a successful catering business, faced with a world that shut down in 2020, a pivot was necessary. While catering meals halted, the desire for cookies continued. There is now a Bell’s Cookie Co. brick and mortar in Seattle as well a a second location in Madrid. Cookies can be ordered for delivery anywhere in the United States or Spain.

Bell’s Cookie Co. has the classic flavours like chocolate chip, snickerdoodle, and triple peanut butter. Then there are the flavours that set Bell’s Cookie Co. apart like: the pantry, lemon blueberry, Colombian corn, and seasonal options. There is also the Bell’s cookie, which is a combination of toffee, potato chips, chocolate chips, and pecans. A dozen cookies are about $30 plus shipping costs.
